Pizza Quinoa Bake
I recently received a free sample of Traina’s Sun Dried Tomato Ketchup. We’ve really been enjoying it, most recently on a big batch of hashbrowns my husband made of breakfast last weekend. (By the way, using coconut oil to make hashbrowns is one of the best ideas ever!) I wanted to try using the ketchup in some more unusual way so when I spotted a recipe for a pizza quinoa casserole from Food Doodles, I knew that’s what I wanted to try.
It was a great success! The sun dried tomato flavor was a great complement to the other pizza flavors in this baked quinoa dish. I used red quinoa which is a more durable than white quinoa. If overcooked, white quinoa which can get a bit mushy whereas red quinoa holds more structure. If you can’t find red quinoa, just use white quinoa but be careful not to overcook it in the first step of this recipe. My family is very much into cheese so I put a really generous amount of cheese on the top of ours (as you can see in the photos). If you’re vegan or just want to avoid the cheese, this would also be great without the cheese on top.
