Gluten Free Almond Biscuits

Thanks to some great ideas from Real Sustenance, I feel like I’ve finally conquered making good gluten free biscuits!

Gluten Free Almond Biscuits

These are made with almond flour, which makes them high in protein and vitamin E. Almonds are packed with manganese and magnesium, and they can lower your risk of both diabetes and cardiovascular disease. I love the nutty taste of almond flour and think almond meal works great for these biscuits. They’re a little more crumbly than traditional biscuits, so if you have kids (or you’re just a messy eater), prepare for a bit of extra clean up after eating!

Ingredients

  • 2 c. almond flour
  • 1/2 c. tapioca flour
  • 1/4 c. potato flour
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 c. softened butter
  • 2 eggs
  • 3/4 tsp. white vinegar

Instructions

  1. Preheat the oven to 350°F.
  2. In the stand mixer, combine the dry ingredients (the flours, salt, baking soda, sugar, and salt).
  3. In a small bowl, combine the we ingredients (butter, eggs, and vinegar).
  4. Slowly add the wet ingredients to the dry with the stand mixer on medium speed. Blend to combine.
  5. On a surface dusted with extra potato flour, press the dough out to a flat rectangle. Use a cup to cut biscuits.
  6. Place biscuits on a greased baking sheet (I used my Silpat on the baking sheet) and bake for 20 minutes.
