Sweet Potato, Apple, and Lentil Soup
Based on a recipe from What Would Cathy Eat
Sweet Potato, Apple, and Lentil Soup
Serves 6
1 Tbsp. olive oil
3 cloves garlic, minced
1 onion
2 large apples, cored and chopped
2 large sweet potatoes, peeled and chopped
2 teaspoons ginger
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
3/4 cup brown lentils
2 tsp. Better Than Bouillion Vegetable Base
8 cups water
1 teaspoon freshly ground black pepper
1 teaspoon salt
Plain Greek yogurt and/or shredded cheddar cheese (to top)
Heat the olive oil over medium heat in a large pot. Add the onion and garlic and cook for 5 minutes. Add the apples, sweet potatoes and spices and cook for 2 minutes. Add the lentils, vegetable base, and water. Bring to a boil, then reduce heat and simmer for 40 minutes, partially covered. Season with salt and pepper to taste. Use an immersion blender (my favorite!) to blend, leaving some chunks. Add more water if you prefer for it to be a thinner soup. Top with Greek yogurt and/or cheddar cheese and serve.
I really like the combination of sweet and savory flavors in this. If you’re prefer for it to be vegan, just top with a plain soy yogurt or nothing at all. It’s not the most beautiful soup but I promise, it tastes great!

This soup looks so good – can’t wait to try it out. Have to buy an immersion blender first – I have had a couple of “soup explosion” accidents with conventional blenders recently, so an immersion blender sounds like much better idea!
